Yuletide mead making!

It has been a year or two but I’ve taken up the fermenters once again. The two in the front will be one gallon blueberry meads.

The 5 gallon big mouth in the back is a bochet. A friend of mine at work gave me some ‘burnt’ honey – honey that had been slightly burnt in the purification process. You have to be careful with burnt honey as the honey will carnalize when heated. The flavor is great, but the problem is that Carmel doesn’t ferment. That said, a bouchet is a mead made from carmalized honey, and I thought that was the perfect use of this gift. Just to be sure there was sugar to ferment, I did add some non-burnt honey.

Now is the hard part of mead making … waiting the 3-6 months before I can sample my first bottle!
